Pades Restaurant in Verden. When a top chef loves the Thermomix

The tip came years ago from my friend Gaby, who lives in Bremen: Pades Restaurant in Verden an der Aller. We have been back several times since and joined two of the cooking classes, one of them a BBQ class in Pades‘ beautiful garden. So when an invitation arrives from Verden, we do not think twice.

This time it was all about the new Thermomix TM7. Gaby has just bought one, I already have mine, and we were both curious what tips a chef like Wolfgang Pade would have for the machine. The invitation came from Antonia, whose son runs a catering business in Hamburg. Most of the guests already had a Thermomix at home, so everyone followed the pots and displays with keen interest.

Herr Pade has been working with the previous models in his restaurant kitchen for years, and he has a lovely comparison for the leap to the TM7: rowing boat versus spaceship. And as always he entertained us along the way with little stories from everyday life in the kitchen.

The cooking ranged right across the menu: gazpacho, a cream cheese spread, a lemon risotto with salmon that I found genuinely interesting, and sous-vide beef fillet steaks with béchamel sauce and small potatoes. The fillets were absolutely delicious, and the sous-vide method truly won me over. The machine also produced two drinks: a champagne lemon slush and a basil smash without alcohol. To finish there were mousse au chocolat and three different cakes.

The laugh of the morning came, of all things, from the baguette. Antonia showed us the ingredients, put everything into the TM7, and when she went to take out the finished dough, only a thin mixture came out. The surprise was great, the explanation followed later: one of Herr Pade’s team had handed her cornstarch instead of flour. Luckily she had baked a few baguettes in advance.

The atmosphere of the rooms is a joy every time, and Herr Pade’s warmth does the rest. You arrive as a guest and after five minutes you feel like an old friend of the house.
